Thyme
This type of honey is bright red in colour and distinguished for its aroma and flavour. Demand for it is high. Pure thyme honey remains in liquid form for 6-18 months, whence it may crystallize. Areas producing thyme honey are all the islands of Greece, particularly the islands of Crete, Cythera, Psara, Carpathos and Peloponnese.
