Making Fajitas
In Mexican cooking, the technique of pan-frying is used for cooking beef to make fajitas, strips of marinated steak that are served sizzling hot in warm tortillas. Skirt or rump steak can be used, cut into strips across the grain.
1. Coat strips of steak in a marinade of chilli oil, lime juice and crushed black peppercorns. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

2. Brush a stovetop grill pan with olive oil. Heat until very hot. Add the beef strips, with pepper slices if you like. Toss over a high heat.

3. When the beef strips and pepper slices are tender and browned all over, remove them from the pan with tongs and serve in warm tortillas.
