Asparagus And Walnut Canapés
Ingredients
1 can asparagus tips
150 g/ 5 oz butter
4 slices bread
1 egg yolk, beaten
Squeeze of lemon juice
1 tbsp single cream
60 g/ 2 oz walnuts, chopped
Salt
Freshly ground black pepper

Serves: 4
Method
Heat the can of asparagus in a bain-marie. Spread the bread slices with half the butter and toast under the grill. Gently heat the egg yolk with the lemon juice in a small pan, stirring. Add the remaining butter in small pieces, allowing each to melt before adding the next. Remove from the heat, and, still stirring, add the cream, chopped walnuts, salt and pepper. Drain the asparagus, arrange on the toast and dress with the sauce. Serve immediately.
