Veal Casserole With Onions

Ingredients

1 kilo of veal (or beef)
1 ½ kilos of small onions
6 cloves of garlic
1 cup of oil
1 onion, finely chopped
2-3 tablespoonfuls of vinegar
1 ½ cups of tomato juice
Salt, pepper
Bay leaves
8-10 peppercorns
Oil for frying

Method

Cut the meat into small portions and put it into a pan with the finely chopped onion and the oil to heat. Turn the meat over a few times, browning it evenly. Add salt, pepper and the vinegar. Cover the pan for half a minute and then add the tomato juice, the garlic and the bay leaves and the peppercorns. Supplement the sauce with some water and allow the meat to stew. In the meantime, peel the onions, after having soaked them in water, then drain and salt them. Fry them and then add them to the meat when it is ready. Allow to stew altogether until all moisture has been absorbed and only the sauce remains.
