Lamb In The Pot
( Arní Youvétsi Me Kritharáki )

Ingredients
1 kilo of lamb, top side
5 very ripe tomatoes
˝ cup of oil or butter
˝ kilo of barley-shaped pasta
Grated cheese
Salt
Pepper

Serves: 5
Method
Cut the lamb into serving portions, wash it and place it in a roasting tin or, even better, in an earthenware pot. Add salt and pepper and the skinned and crushed tomatoes, the oil and a little water and allow to bake in a moderate oven. When the lamb is almost done, pour in 4 cups of hot water and add the pasta. Add salt and stir. Allow the meat to finish in a moderate oven, turning it once or twice. To be served with grated cheese.
Variation:-
1. The meat can be put into five or six individual earthenware pots and the pasta cooked separate.
2. Veal can be used instead of lamb.
