Lamb Pasties ( Arní Exochikó )

Ingredients
1 kilo of leg of lamb
1 cup of butter
10 small potatoes
5 whole onions
5 cloves of garlic
½ cup of grated kefalotiri cheese
5 pieces of feta cheese
5 sheets of ready-made fyllo pastry
Salt, pepper, rigani, oil

Method
Cut the lamb into 5 portions and put it into a small pan with some butter, the potatoes and the onions to brown slightly. Separate each sheet of pastry, coat with butter and put 1 portion of meat, 1 whole peeled clove of garlic, 2 small potatoes, 1 small onion, 1 piece of kefalotiri and a little rigani on each.
Add some more butter and fold the pastry into a pasty. Goat the roasting tin with oil; coat the pasties with butter, cover them with aluminium foil and leave them to cook in a moderate oven for about 1 hour.
