Kalitsounia With Sweet Mezithra

Ingredients
600 grms of sugar
½ cup of oil
½ cup of butter
1 cup of milk
6 eggs
1 teaspoonful of baking powder
1 teaspoonful of baking soda
2 sticks of vanilla
2 kilos of flour (or as much as is needed)
For the filling:
1 ½ kilos of unsalted mezithra or anthotiro cheese
Cinnamon
Mint
1 cup of sugar
1 egg (for glazing)
Method
Beat together the butter, oil and sugar. Add the eggs one by one and the vanilla. Combine the baking powder with the flour and dissolve the soda in the milk. Use as much of the 2 kilos of flour as is necessary to make a dough which can be handled. Roll it out thick and cut into squares of 10 x 10 centimetres.
Prepare the filling by combining the sugar, the mezithra, the cinnamon and the mint. With a soupspoon as a measure, spoon this mixture on to each square of pastry. Fold two corners towards the centre, then fold the other two over to the edges of these, maintaining a square shape. Coat with the egg and sprinkle with cinnamon; bake for 30 minutes in a moderate oven.
