1 kilo of pork chops with bone
2 cups dry dark red wine
˝ cup corn oil
1 teaspoon salt
1 teaspoon pepper
2 tablespoons crushed coriander seeds
Warm water


Serves: 4


Cut the meat into strips four centimetres thick and marinate them in the wine in a glass basin. Cover well and refrigerate overnight. The next day drain the meat keeping one cup of the wine and sprinkle the meat with salt, pepper and coriander, and fry in corn oil till golden on all sides.

Pour in the wine, heat up again and then add enough warm water to half cover the meat. Cover and simmer on low heat for an hour. This dish is served with pilaf, cracked wheat, small buttered potatoes, fresh lettuce, spring onions and radishes.
