Ingredients
1 sheep's "bolia" (the "veil" the lacy sheath of fat found on lamb)
1 kilo minced beef
A little vinegar
2 medium onions, finely chopped
1 bunch fresh parsley, finely chopped 1 teaspoon pepper
1 teaspoon ground cinnamon
1 teaspoon dried mint
½ cup Melba toast crumbs
2 tablespoons olive oil

Method
Soak the sheep's "veil" for one hour in a basin of warm water to which vinegar has been added. Stir all the other ingredients together and knead them very thoroughly. From the mixture take an amount equal to one tablespoon and shape it into an elongated meatball, like souzoukakia. Cut the flat "veil", into squares of 10x15 centimetres, and wrap each meatball in one. Grill in a row over medium heat making sure to turn them over. Serve immediately.
