Red Cherry Conserve

Ingredients
1 kilo of red cherries
1 kilo of sugar
1 cup of water, vanilla
1 teaspoonful of lemon juice
Method
Choose large, hard cherries. Wash them well and remove the stems and leaves; also remove the stones with a special soop. Put the sugar and water on to boil, stirring at the start. As it starts to thicken, remove from heat and allow to cool a little. Then, add the cherries and put back on to heat, but this time at a high heat. Remove the scum that forms on the surface and once the syrup thickens again, add the lemon juice and vanilla. When it cools completely, keep in glass jars.
