Green Salad With White Truffle
Ingredients
1 lettuce heart
12 cooked green asparagus tips
3 celery stalks, chopped
60 g/ 1 oz white truffles, grated
Dressing:
4 anchovies, soaked in milk and drained
2 hard-boiled eggs, shelled and chopped
150 ml/ 5fl oz olive oil
60 ml/ 2 fl oz white wine vinegar
1 tsp mustard
Salt
Freshly ground white pepper

Serves: 4
Method
Wash and dry the lettuce keeping the leaves whole. Arrange in a bowl and put the cooked asparagus tips in a circle on top. Place the chopped celery in the centre and sprinkle over the grated truffles.
Pound together the anchovies, eggs, oil, mustard and vinegar. Season with salt and pepper and pour over the salad.
