Roman Salad
Ingredients
150 ml/ 5 fl oz olive oil
60 ml/ 2 fl oz white wine vinegar
Salt
1 lettuce
4 radishes
2 celery stalks
2 radicchio
1 red onion, peeled and finely sliced

Serves: 4
Method
Mix together the oil and vinegar and season with salt to make a vinaigrette. Cut the lettuce, radishes, celery stalks and radicchio into coarse julienne strips. Mix together in a bowl with the onion and dress with the vinaigrette.
