Whiskey Cake
Ingredients
1 ½ cups walnuts, chopped
½ cup raisins, chopped
½ cup currants
1 cup flour
1 teaspoon baking powder
¼ teaspoon salt
½ cup (1 stick) butter
1 cup sugar
3 eggs, at room temperature, separated
1 teaspoon grated nutmeg
½ teaspoon ground cinnamon
⅓ cup bourbon whiskey
Confectioner's sugar, for dusting

Method
1. Preheat the oven to 325°F. Line the bottom of a 9 x 5 x 3 inch loaf pan with wax paper and grease the paper and sides of the pan.
2. Place the walnuts, raisins, and currants in a bowl. Sprinkle over 2 tablespoons of the flour, mix and set aside. Sift together the remaining flour, baking powder, and salt.
3. Cream the butter and sugar until light and fluffy. Beat in the egg yolks.
4. Mix the nutmeg, cinnamon and whiskey. Fold into the butter mixture, alternating with the flour mixture.
5. In another bowl, beat the egg whites until stiff. Fold into the whiskey mixture until just blended. Fold in the walnut mixture.
6. Bake until a cake tester inserted in the centre comes out clean, about 1 hour. Let cool in the pan. Dust with confectioner's sugar over a template.
