Okra
Ingredients
1 kilo okra
1 cup virgin olive oil
1 onion, finely chopped
½ kilo tomatoes, finely chopped
A little parsley
Salt and black pepper
Method
Clean the okra. Place them in a baking tray with salt and vinegar and leave out in the sun.
Once they start to dry out, add the tomatoes, parsley, olive oil, salt, pepper and water so that the okra is just about covered.
Cook in the oven for an hour.
