Melomakarona
(Small Honey Cakes)
Ingredients
2 cups olive oil
1 cup sugar
1 cup orange juice
½ cup cognac
2 dessert spoons baking powder
8 cups fine flour
1 dessert spoon baking powder
Orange rind
Cinnamon
Ground walnuts
For the syrup:
2 cups water
2 cups honey
2 cups sugar
Method
Stir the olive oil and the sugar together thoroughly and add the rest of the ingredients one-by-one (the baking soda diluted in the juice, the baking powder diluted in the juice). Shape the mixture into small cakes and lay them out on an oiled baking tray. Heat in a medium pre-heated oven for 20-25 minutes. When they are baked leave to cool. Prepare the syrup by mixing the sugar and the honey in the warm water. Arrange the melomakarona in a baking tray and drizzle them with the warm syrup. Sprinkle with ground walnuts.
