Cretan Xerotigana

Ingredients

3 teacups flour
3 soup spoons orange juice
4 soup spoons water
3 soup spoons olive oil
Salt

For the syrup:

1 teacup honey
1 teacup sugar
1 teacup water
Walnuts, roughly chopped
Sesame seeds
Cinnamon


Method

In a bowl, sift 2 ½ cups of flour with salt. Open a hole in the middle and pour the orange juice, water and olive oil. Knead the pastry well until it is soft. Cover and leave to rise for half an hour. Roll the pastry into thin layers on a floured surface. Slice the pastry using a toothed roller into strips 40 cm long and 2 cm wide. Take each strip and wrap it around your fingers, so as to create a roll about the size of a saucer. In a frying pan heat enough olive oil to fry the xerotigana on a medium flame. Once the xerotigana have expanded remove them with a slotted spoon, before they start to go golden. Dip them in the syrup and sprinkle with walnuts, sesame seeds and cinnamon.
