Kohlrabi Baked With Ham
Kohlrabi, which is German for "cabbage-turnip", is a member of the cabbage family with a delicate turnip-like taste. Kohlrabi may be purple or greenish-white and is delicious either raw, grated and sprinkled with salt, or cooked. The leaves can also be eaten - treat in the same way as spinach.
Ingredients
50g/2oz/4 tbsp butter
4 kohlrabi, peeled and diced
225g/8oz thick ham, diced
30m1/2 tbsp chopped fresh parsley
For the sauce
3 egg yolks
250ml/8fl oz/1 cup double cream 30ml/2 tbsp plain flour
Pinch of mace
Salt and freshly ground black pepper

Method
1. Preheat the oven to 180°C/350°F/ Gas 4. Melt the butter in a large frying pan and gently cook the kohlrabi for 8-10 minutes.
2. Arrange half of the kohlrabi in the bottom of a greased ovenproof dish. Top with the ham and parsley, and finish with the remaining kohlrabi.
3. Beat the sauce ingredients together and pour over the kohlrabi and ham. Bake for 30-35 minutes or until golden brown, and serve hot.
