Mixed Salad Leaves
With sesame dressing and shaved Parmesan
Ingredients
2 tablespoons light soy sauce
1 tablespoon sesame oil
1 tablespoon raspberry vinegar
150 g/5 oz mixed salad leaves
(Lollo rosso, lambs lettuce, watercress, curly endive, radicchio, butterhead lettuce, rocket, baby spinach)
25 g/1 oz Parmesan cheese

Serves: 2
Method
1. Whisk together the soy sauce, sesame oil and raspberry vinegar.
2. Put the leaves into a salad bowl and toss in the dressing Shave the cheese over the top with the long blade of the grater, and serve at once.
