Welsh Rarebit
Ingredients
2 eggs
⅓ pint (1 cup) beer
10 oz. Cheddar cheese, cubed
1 oz. (2 tablespoons) butter
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
4 drops Tabasco sauce
4 slices freshly buttered toast

Serves: 4
Method
Put the eggs into a 1 quart heat resistant casserole. Beat thoroughly, then stir in the beer, cheese, butter, mustard and sauces. Cook uncovered on HIGH for 5-6 minutes until the cheese has melted and the mixture thickened, stirring once every minute. Beat with a wire whisk until the mixture is smooth. Pile onto the toast and serve at once.
