Bacon Omelette With Pimento
Ingredients
8 slices bacon
6 eggs
4 tablespoons (⅓ cup) milk
6 tablespoons (½ cup) mayonnaise
1 oz. (¼ cup) pimento, chopped
1 oz. (¼ cup) green pepper, chopped
¼ teaspoon salt
Tomato slices to garnish

Method
Place the bacon slices between sheets of absorbent kitchen paper in a 1½ quart (10 x 6 inch) heat resistant dish. Cook on HIGH for 7-9 minutes until the bacon is crisp. Drain off any fat, crumble the bacon and set aside.
Whisk the eggs, milk and mayonnaise together in a mixing bowl. Add the bacon, pimento, green pepper and salt. Pour into the baking dish. Cover and cook on HIGH for 5-6 minutes until the centre is almost set. Garnish with the tomato slices. Cover and leave to stand for 5 minutes before serving.
