Chicken Kebabs
Ingredients
2 lb. boned chicken breasts
4 tablespoons (⅓ cup) soy sauce
½ oz. (1 tablespoon) sugar
1 teaspoon salt
Pinch of pepper
¼ teaspoon ground ginger
¼ teaspoon garlic powder
2 green peppers, cut into ½ inch cubes
8 oz. can mushrooms, drained
2 tablespoons (3 tablespoons) honey
Method
Remove the skin from the chicken breasts and cut the flesh into 1 inch cubes. Combine the soy sauce, sugar, salt, pepper, ginger and garlic powder in a large bowl. Mix thoroughly.
Add the chicken and toss gently to coat the pieces well. Thread the chicken, peppers and mushroom caps alternately on to wooden skewers. Stir the honey into the remaining liquid and brush each kebab liberally with the mixture.
Arrange the kebabs in a single layer in a shallow heat resistant baking dish and cook covered on HIGH for 5-7 minutes until the chicken is cooked and the green peppers tender. Turn the kebabs occasionally during cooking. Serve hot or cold.
