Smoked Salmon And Whitebait Salad
Ingredients
500 g/ 1 lb 2 oz cooked whitebait
300 g/ 10 oz smoked salmon, finely sliced
3 fl oz olive oil
Juice of ½ a lemon
Salt
2 heads chicory, finely sliced
2 tablespoons chopped fresh herbs, e.g. thyme, coriander

Method
The traditional Spanish recipe uses elvers (baby eels) instead of whitebait.
Arrange the whitebait and smoked salmon in a salad bowl. Dress with oil and the lemon juice. Season with salt.
Surround with the sliced chicory and garnish with fresh herbs.
