Thai Chicken Salad

This is a superb main meal salad and once you have prepared the various ingredients, it is simple to cook and assemble. Most of the Thai ingredients are available from Asian stores, but if you can't get roasted ground rice, see the Cook's Tip to make your own.

Ingredients

450g/1lb minced chicken
1 stalk lemon grass, finely chopped
3 kaffir lime leaves, finely chopped
4 red chillies, seeded and chopped
60ml/4 tbsp lime juice
30ml/2 tbsp fish sauce
15ml/1 tbsp roasted ground rice
2 spring onions, sliced
30ml/2 tbsp coriander leaves
Mixed salad leaves
Cucumber and tomato slices, to serve
Sprigs of mint, to garnish

Method

Heat a large non-stick frying pan. Add the minced chicken and cook in a little water.

Stir constantly until cooked; this will take about 7-10 minutes.

Transfer the cooked chicken to a large bowl with all the remaining ingredients. Mix thoroughly.

Arrange the mixed salad leaves, cucumber and sliced tomato on a large serving platter. Spoon the flavoured chicken mixture over the top of the salad and garnish with some sprigs of fresh mint.

Cook’s Tip:- Use sticky, or glutinous, rice to make roasted ground rice. Put it in a frying pan and dry roast until golden, then grind to a powder in a mortar and pestle, food processor or blender. Keep in an airtight container in a cool, dry place and use as required.
