Spinach And Mushroom Salad
This is an excellent choice for anyone counting calories as it is very low in fat, yet still tasty with a variety of flavours and textures. Watercress or rocket would make a delicious addition.
Ingredients
10 baby sweetcorn
115g/4oz mushrooms
2 tomatoes
1 small onion
20 small spinach leaves
25g/1oz salad cress
Salt and black pepper
2 sprigs fresh coriander, to garnish
3-4 lime slices, to garnish

Method
Halve the baby sweetcorn, and slice the mushrooms and tomatoes. Cut the onion into very thin rings.
Mix the spinach, baby sweetcorn, onion, mushrooms, tomatoes and salad cress together and arrange on a serving plate. Season with salt and pepper and garnish with fresh coriander and lime slices.
