Serves: 4

Method

Slice the pepper, discarding the seeds and core, then roughly chop the cucumber and tomatoes. Place them in a large salad bowl.

Trim and slice the spring onions. Add to the cucumber, tomatoes and pepper with the finely chopped parsley, mint and coriander.

To make the dressing, blend the garlic with the olive oil and lemon juice in a jug, then season to taste with salt and black pepper. Pour the dressing over the salad and toss lightly to mix.

Toast the pitta bread in a toaster or under a hot grill until crisp and then serve it alongside the salad.

If you prefer, make this salad in the traditional way. After toasting the pitta bread until crisp, crush it in your hand and then sprinkle it over the salad before serving. Alternatively, cut the pitta bread in half and open up to make pockets. Spoon the salad into the pockets for a Middle Eastern sandwich!

Cook's Tip:- Although the recipe calls for only 30ml/ 2 tbsp of each of the herbs, if you have plenty to hand, then you can add as much as you like to this aromatic salad.
