Spicy Baby Vegetable Salad
This warm salad makes an excellent accompaniment to a variety of main course dishes.
Ingredients
10 small new potatoes, halved
15 baby carrots
10 baby courgettes
115g/4oz/1 ½ cups button mushrooms
For the dressing
45 ml/3 tbsp lemon juice
22.5ml/1 ½ tbsp olive oil
15ml/1 tbsp chopped fresh coriander
2 small green chillies, seeded and finely chopped
5ml/ 1 tsp salt

Method
Wash and boil the potatoes and carrots until tender. Trim the courgettes and steam until tender.
Drain all the vegetables and place in a serving dish with the mushrooms.
In a separate bowl, mix together the lemon juice, olive oil, chopped coriander, green chillies and Salt until well blended.
Pour the dressing over the vegetables and toss to mix. Serve with grilled meat or fish.
