Sweet And Sour Sauce
Ingredients
Makes about 450 ml (16 fl oz/2 cups).
2 tablespoons vegetable oil
1 clove garlic, chopped
2 shallots or ½ onion, chopped
1 teaspoon chilli sauce
2 tablespoons tomato ketchup (sauce)
2 tablespoons soy sauce
1 tablespoon fish sauce
2 tablespoons sugar
2 tablespoons red rice vinegar
About 115 ml (4 fl oz/ ½ cup) chicken stock
2 tablespoons cornflour
Method
Heat oil in a medium saucepan and gently stir-fry the garlic and shallots or onion until golden but not brown.
Add chilli sauce, tomato ketchup (sauce), soy and fish sauces, sugar and vinegar. Stir to blend well, then add the stock and bring to the boil, stirring continuously. Taste the sauce to check the sweet and sour balance, and adjust seasoning if necessary. Mix cornflour with 2-3 tablespoons water and add to sauce, stirring until smooth, then remove from heat and serve.
Note:- This sauce is traditionally used for fried or grilled dishes, or it can be used as a dip at the table.
