Persian Melon Salad

This is a typical Persian dessert, using a mixture of sweet fresh fruits flavoured with rose-water and aromatic mint.

Ingredients

2 small melons
225g/8oz/1 cup strawberries, plus 4 to decorate
3 peaches, peeled and cut into small cubes
1 bunch seedless grapes (green or red)
3ml/2 tbsp caster sugar
15ml/1 tbsp rose-water
15ml/1 tbsp lemon juice
Crushed ice
4 sprigs of mint, to decorate

Method

Carefully cut the melons in half and remove the seeds. Scoop out the flesh with a melon baller, making sure not to damage the skin. Reserve the melon shells. Alternatively, if you don't have a melon ballet, scoop out the flesh using a large spoon and cut into bite size pieces.

Reserve four strawberries and slice the others. Place in a bowl with the melon balls, the peaches, grapes, sugar, rose water and lemon juice.

Pile the fruit into the melon shells and chill in the fridge for 2 hours.

To serve, sprinkle with crushed ice, decorating each melon with a whole strawberry and a sprig of mint.

Cook’s Tip:- To peel fresh peaches, cover them with boiling water and leave to stand for a couple of minutes. Cool them under cold water before peeling.
