Melon And Strawberry Salad
A beautiful and colourful fruit salad, this is suitable to serve as a refreshing appetizer or to round off a meal.
Ingredients
1 galia melon
1 honeydew melon
½ watermelon
225g/8oz/1 cup fresh strawberries
15ml/1 tbsp lemon juice
15ml/1 tbsp clear honey
15ml/1 tbsp chopped fresh mint
1 mint sprig (optional), to garnish

Method
Prepare the melons by cutting them in half and discarding the seeds. Use a melon baller to scoop out the flesh into balls, or cut it into cubes with a knife. Place the melon balls (or cubes) in a fruit bowl.
Rinse and take the steins off the strawberries, cut these in half and add them to the fruit bowl.
Mix together the lemon juice and clear honey with about 15ml/1 tbsp of water. Stir carefully to blend and then pour over the fruit. Stir the fruit so that it is thoroughly coated in the lemon and honey mixture.
Sprinkle the chopped mint over the top of the fruit. Serve garnished with the mint sprig, if wished.

Cook’s Tip:- Use whichever melons are available, substitute cantaloupe for galia or charentais for watermelon, for example. However, try to find three different kinds of melon so that you get variation in colour, and also a variety of textures and flavours.
