Mandarin And Orange Flower Salad
Mandarins, tangerines, clementines, mineolas: any of these lovely citrus fruits are suitable for this recipe.
Ingredients
10 mandarins
15ml/ 1 tbsp icing sugar
10ml/2 tsp orange flower water
15ml/1 tbsp chopped pistachio nuts

Method
Thinly pare a little of the rind from one mandarin and cut it into fine shreds for decoration. Squeeze the juice from two mandarins and reserve it.
Peel the remaining fruit, removing as much of the white pith as possible. Arrange the whole fruit in a wide dish.
Mix together the reserved mandarin juice, icing sugar and orange flower water, then pour it over the fruit. Cover the dish and chill for at least 1 hour.
Blanch the shreds of mandarin rind in boiling water for 30 seconds. Drain, then leave to cool before sprinkling them over the mandarins, with the pistachio nuts.
