Vegetarian Dipping Sauce
Ingredients
1 tablespoon sugar
2 tablespoons chilli sauce
2-3 tablespoons water
1 small red or green chilli, seeded and chopped
1 tablespoon roasted peanuts, coarsely chopped

Serves: 4
Method
In a small bowl, mix the sugar with the chilli sauce and water.
Add chopped chilli and transfer the sauce to 4 individual saucers to serve. Sprinkle the chopped peanuts over the top as a garnish.
Note:- This sauce is known as nuoc leo. The liquid base can be made in advance; add the freshly chopped chilli and the peanuts just before serving.
