Baked Nectarines
Preparation time: 5 minutes
Cooking time: 20-30 minutes
Oven: 200°C, 400°F, Gas Mark6
Ingredients
6 large ripe nectarines
4 almond macaroons, crushed
50g (2oz) mixed glacé fruits, finely shredded
½ egg, beaten
25g (1 oz) butter
150ml (¼ pint) sweet white wine or sweet sherry

Method
1. Wash the nectarines and halve them.
2. Remove the stones. Using a teaspoon, scrape out a little of the flesh to enlarge the cavity slightly.
3. Put the extra pulp into a bowl and mix with the crushed macaroons, glacé fruits and the beaten egg.
4. Fill the nectarine cavities with the mixture.
5. Using 15g (½ oz) of the butter, lightly grease a shallow dish large enough to hold the nectarine halves in a single layer.
6. Place the halves stuffing side up. Dot each one with a little of the remaining butter and sprinkle with the wine.
7. Bake in a preheated oven for 20-30 minutes until tender and serve hot with whipped cream.
