Ginger Beer
Ingredients
1 oz. root ginger
½ oz, cream of tartar
1 lb. white sugar
1 gallon water
1 lemon

Method
Put the bruised ginger, cream of tartar, sugar and lemon rind (no white pith). in a bowl and cover with .the boiling water. Stir vigorously until the sugar is dissolved and allow to cool. Add the yeast and lemon juice, cover with a thick cloth and leave twenty-four hours in a warm room. Remove the scum, syphon off the liquid without disturbing the sediment, and bottle, cork and wire as quickly as possible. The beer is ready to drink in two to three days time.
