Cottage Cider 2
Ingredients
10 lb. windfall apples
1 lb. raisins
5 Campden tablets
1 gallon water
1 lb. white sugar
Yeast
Method
Wash the fruit and slice with a stainless steel or silver placed knife. Throw into a jug with the crushed Campden tablets and coarsely chopped raisins. Dissolve the sugar in the water and pour into the jug. Leave three days, cover with a cloth, stirring twice daily, then add the yeast. Put in a warm room until gas bubbles are no longer formed. Pour off the supernatent liquid, squeeze the pulp through a thick cloth and add this liquid to that already poured off. Continue as directed in the last paragraph of the previous recipe, Cottage Cider 1.
