Rich Chocolate Brioche Bake

Ingredients

40g/1 ½ oz/3 tbsp unsalted butter, plus extra for greasing
200g/7oz plain chocolate, chopped into small pieces
60ml/4 tbsp bitter marmalade
4 individual brioches, cut into halves, or 1 large brioche loaf, cut into thick slices
3 eggs
300ml/ ½ pint/ 1 ¼ cups milk
300ml/ ½ pint/1 ¼ cups single cream
30ml/2 tbsp demerara sugar

Method

1. Preheat oven to 180°C/350°F/Gas 4. Using the extra butter, lightly grease a shallow ovenproof dish.


2. Melt the chocolate with the marmalade and butter in a heatproof bowl over just simmering water, stirring the mixture occasionally, until smooth.


3. Spread the melted chocolate mixture over the brioche slices. Arrange them in the dish so that the slices overlap.


4. Beat the eggs in a large bowl, then add the milk and cream and mix well. Transfer to a jug and pour evenly over the slices. Sprinkle with the demerara sugar and bake for 40-50 minutes, until the custard has set lightly and the brioche slices are golden brown. Serve hot.
