Peachy Chocolate Bake
Ingredients
200g/7oz plain dark chocolate, chopped into small pieces
115g/4oz/ ½ cup unsalted butter
4 eggs, separated
115g/4oz/ ½ cup caster sugar
425g/15oz can peach slices, drained
Whipped cream or Greek-style yogurt, to serve

Method
1. Preheat oven to 160°C/325°F/Gas 3. Butter a wide ovenproof dish. Melt the chocolate with the butter in a heatproof bowl over barely simmering water. Remove from the heat.
2. Whisk the egg yolks with the sugar until thick and pale. In a clean, grease free bowl, whisk the whites until stiff.
3. Beat the chocolate into the egg yolk mixture. Fold in the whites lightly.
4. Fold the peach slices into the mixture, then tip into the prepared dish. Bake for 35-40 minutes or until risen and just firm.
5. Serve hot, with cream or Greek style yogurt if liked.
