Chocolate Amaretti Peaches

Ingredients

115g/4oz amaretti biscuits, crushed
50g/2oz plain chocolate, chopped
grated rind of ½ orange
15ml / 1 tbsp clear honey
1.5ml/ ¼ tsp ground cinnamon
1 egg white, lightly beaten
4 firm ripe peaches
150ml/ ¼ pint/ ⅔ cup white wine
15ml/1 tbsp caster sugar whipped cream, to serve

Method

1. Preheat oven to 190°C/375°F/Gas 5. Mix together the crushed amaretti biscuits, chocolate, orange rind, honey and cinnamon in a bowl. Add the beaten egg white and mix to bind the mixture.


2. Halve and stone the peaches and fill the cavities with the chocolate mixture, mounding it up slightly.


3. Arrange the stuffed peaches in a lightly buttered, shallow ovenproof dish, which will just hold the peaches comfortably. Mix the wine and sugar in a jug.


4. Pour the wine mixture around the peaches. Bake for 30-40 minutes, until the peaches are tender when tested with a slim metal skewer and the filling is golden. Serve at once with a little of the cooking juices spooned over.Offer the whipped cream separately.
