Steamed Chocolate And Fruit Puddings With Chocolate Syrup
Ingredients
115g/4oz/ ⅔ cup dark muscovado sugar 1 eating apple
75g/3oz/ ¾ cup cranberries, thawed if frozen
115g/4oz/ ½ cup soft margarine
2 eggs
115g/4oz/ ½ cup self-raising flour
45ml/3 tbsp cocoa powder
FOR THE CHOCOLATE SYRUP
115g/4oz plain chocolate, chopped
30ml/2 tbsp clear honey
15ml/ ½ oz/1 tbsp unsalted butter
2.5ml/ ½ tsp vanilla essence

Method
1. Prepare a steamer or half fill a saucepan with water and bring it to the boil. Grease four individual pudding basins and sprinkle each one with a little of the muscovado sugar to coat well all over.
2. Peel and core the apple. Dice it into a bowl, add the cranberries and mix well. Divide the fruit among the prepared pudding basins.
3. Place the remaining muscovado sugar in a mixing bowl. Add the margarine, eggs, flour and cocoa. Beat until combined and smooth.
4. Spoon the mixture into the basins and cover each with a double thickness of foil. Steam for about 45 minutes, topping up the boiling water as required, until the puddings are well risen and firm.
5. Make the syrup. Mix the chocolate, honey, butter and vanilla essence in a small saucepan. Heat gently, stirring until melted and smooth.
6. Run a knife around the edge of each pudding to loosen it, then turn out on to individual plates. Serve at once, with the chocolate syrup.
