Chocolate, Date And Walnut Pudding
Ingredients
25g/1oz/ ¼ cup chopped walnuts
25g/1 oz/2 tbsp chopped dates
2 eggs
5ml / 1 tsp vanilla essence
30ml /2 tbsp golden caster sugar 45ml/3 tbsp plain wholemeal flour 15ml/1 tbsp cocoa powder
30ml/2 tbsp skimmed milk

Method
1. Preheat oven to 180°C/350°F/Gas 4. Grease and base-line with greaseproof paper a 1.2 litre/2 pint/ 5 cup pudding basin. Spoon in the walnuts and dates.
2. Combine the egg yolks, vanilla essence and sugar in a heatproof bowl. Place over a pan of hot water.
3. Whisk the egg whites to soft peaks. Whisk the egg yolk mixture until it is thick and pale, then remove the bowl from the heat. Sift the flour and cocoa over the mixture and fold them in with a metal spoon. Stir in the milk, to soften the mixture, then fold in the egg whites.
4. Spoon the mixture over the walnuts and dates in the basin and bake for 405 minutes or until the pudding is well risen and firm to the touch. Run a knife around the pudding to loosen it from the basin, and then turn it out on to a plate and serve immediately.
