Chocolate Chip And Banana Pudding
Ingredients
200g/7oz/1 ¾ cups self-raising flour
75g/3oz/6 tbsp unsalted butter or margarine
2 ripe bananas
75g/3oz/6 tbsp caster sugar
60ml/4 tbsp milk
1 egg, beaten
60ml/4 tbsp plain chocolate chips or chopped chocolate Glossy

Method
1. Prepare a steamer or half fill a saucepan with water and bring it to the boil. Grease a 1 litre/ 1 ¾ pint/ 4 cup pudding basin. Sift the flour into a bowl and rub in the unsalted butter or margarine until the mixture resembles coarse breadcrumbs.
2. Mash the bananas in a bowl. Stir them into the flour and butter mixture, then add the caster sugar and mix well.
3. Whisk the milk with the egg in a jug or small bowl, then beat into the pudding mixture. Stir in the chocolate chips or chopped chocolate.
4. Spoon the mixture into the prepared basin, cover closely with a double thickness of foil, and steam for 2 hours, topping up the water as required.
5. Run a knife around the top of the pudding to loosen it, then turn it out on to a serving dish. Serve hot, with the sauce.
