Mount Carmel Salad
Serve as an accompaniment to a hot main dish.
Ingredients
120g/ 4oz carrots, peeled
1 green pepper
60g/2oz-dried apricots
1 tbsp sesame seeds
225g/8oz beansprouts
60 ml / 4 tbsps low calorie French dressing
2 tbsps pineapple juice

Preparation time: 10 minutes
Serves: 5
Method
1. Cut the carrots into matchsticks.
2. De-seed and slice the pepper thinly.
3. Cut the apricots into slivers.
4. Toast the sesame seeds in a dry pan over a low heat until they are golden brown and give off a delicious aroma.
5. Place the carrots, pepper, apricots and beansprouts in a serving dish.
6. Mix the French dressing with the pineapple juice and fold into the salad.
7. Sprinkle the sesame seeds over the top.
8. Serve at once.
COOK'S TIP:- Use beansprouts which are at least 2.5cm/1-inch long for this recipe.
