Cucumber And Fruit Salad
You can use any other small ripe melon to make this refreshing dish.
Ingredients
1 small honeydew melon, halved and de-seeded
1 medium cucumber, scored lengthways with a fork and thinly sliced
5oz (150 g) strawberries, hulled and quartered
2 tablespoons lemon juice
1 tablespoon virgin olive oil
⅛ level teaspoon cayenne pepper
2 level tablespoons chopped fresh coriander, or ½ level teaspoon ground coriander
Sprigs of fresh mint or coriander to garnish

Serves: 4
Method
1. Slice the melon into wedges and cut the flesh away from the skin. Cut the flesh into cubes and mix it with the cucumber and strawberries in a salad bowl.
2. Combine the lemon juice and oil with the cayenne pepper and chopped or ground coriander. Pour the dressing over the fruits and turn to coat everything. Garnish with the mint or coriander sprigs.
