Strawberry Cloud
It takes no time at all to make this delightful summer dessert.
VARIATION:- Other fruits such as apples or peaches may be used instead but they will not produce such a colourful dessert.
Ingredients
460g/1lb strawberries
1 x 275g/10oz pack silken tofu
Juice of ½ lemon
Artificial sweetener, to taste
Few drops of vanilla essence
Details
Preparation time: 8 minutes
Serves: 4
Method
1. Wash and hull the strawberries. Leave a few on one side to decorate.
2. Drain the tofu and put into the liquidiser together with the strawberries, lemon juice and sweetener.
3. Liquidise until smooth.
4. Add vanilla essence to taste and mix well.
5. Divide the mixture between 4-6 individual serving dishes and decorate with the reserved strawberries.
6. Chill until required.
COOK'S TIP:- Substitute low-fat curd cheese for the tofu if wished and add lemon juice to taste.
