Peach Sorbet
PREPARATION TIME: 20 minutes, plus 5 hours to chill and Freeze
Ingredients
3½ oz (100 g) granulated sugar
7 fl oz (200 ml) water
4 large ripe peaches, skinned, halved and stoned, and sliced
2 tablespoons lemon or lime juice
1 small ripe peach, sliced, for decoration

Method
1. Put the sugar and water in a saucepan and stir over a low heat until the sugar dissolves then bring to the boil and boil for 1 minute. Take the syrup off the heat and let it cool for 30 minutes. Pour it into a bowl, cover and refrigerate for 1 ½ hours.
2. Blend the peach slices in a food processor for 1 minute, then add the syrup and the lemon or lime juice, and blend for 30 seconds more. Pour the mixture into a plastic box, cover and freeze for about 3 hours or until hard.
3. Peel and slice the small peach. Cut the frozen peach mixture into large pieces and blend in a food processor for 10 seconds, until soft. Spoon the sorbet into individual dishes and decorate each serving with some peach slices. Serve at once.
The luscious crushed flesh of ripe peaches, mingled with syrup and enlivened with citrus juice, makes a tingling-fresh, ice-cold pudding for summer days.
