Cardamom Coffee

3 cardamom pods
2 tablespoons coarsely ground dark roasted coffee beans
1 teaspoon sugar
1 cup (250ml) water


Serves: 4


1. Place cardamom pods on oven tray. Toast in moderate oven about 4 minutes; cool. Using mortar and pestle, lightly crush pods.

2. Combine cardamom, coffee, sugar and water in small pan, stir over heat until mixture comes up to boiling point; remove from heat.

3. Stand a minute or 2 to allow coffee grains to settle. Strain into tiny coffee cups to serve.

Recipe best made just before serving.
Freeze: Not suitable.
Microwave: Suitable.
