Mango Fool

This rich and refreshing dessert brings a meal to a close with a South-east Asian touch.

450g/1 lb fresh mangoes, peeled and sliced
2 tbsp sugar
250ml/9fl oz double or whipping cream


Serves: 4


1. Puree the mangoes in a food processor or blender, then push through a fine sieve and stir in the sugar.

2. Whip the cream until it forms stiff peaks, then gently fold into the mango puree. This will keep for 3-4 hours, covered with plastic wrap, in the fridge.
