Yogurt With Cucumber
Ingredients
½ cucumber
1 small onion
2 garlic cloves
1-2 sprigs fresh parsley
475ml/16fl oz/2 cups natural yogurt
1.5ml/ ¼ tsp paprika
Salt and white pepper
Mint leaves, to garnish
Pitta bread (optional), to serve

Serves: 4
Method
Finely chop the cucumber and onion, crush the garlic and finely chop the parsley.
Lightly beat the yogurt and then add the cucumber, onion, garlic and parsley and season with salt and pepper to taste.
Sprinkle with a little paprika and chill for at least 1 hour. Garnish with mint leaves and serve with warm pitta bread or as an accompaniment to meat, poultry and rice dishes.
Cook’s Tip:- It's not traditional, but other fresh herbs, such as mint or chives, would be equally good in this dish. Use a mild onion, or substitute 2 shallots.
