Cranberry Horseradish Relish
Klyukva S Khrenom
This relish is a good condiment to serve on the zakuska table with cold boiled beef, or if you are not planning a Russian-style meal, it tastes equally good with a pot roast. The Russians love foods which pique the palate - like cranberries with their sour tang and horseradish with its fiery nip.
Ingredients
Makes about 1 pint (600 ml)
1 lb (450 g) cranberries
8 oz (225 g) soft brown sugar
5 oz (150 g) prepared horseradish (preferably home-made or use bottled horseradish, drained)
Juice of 1 lemon
Method
Chop the cranberries medium fine (this is most easily done when they are frozen). Stir in the remaining ingredients and mix well. Place the relish in the refrigerator and chill at least 2 days before serving.
