Prepared Horseradish

In Russian, an 'old geezer' is a staryi khren or 'old horseradish' - one who has been through a lot but has not lost his sharp bite. When properly refrigerated, this tangy horseradish will retain its bite for several weeks.
Ingredients
Makes about 10 oz (280 g) prepared horseradish
6 oz (170 g) piece of horseradish root (about half of a large root)
4 fluid oz (120 ml) white vinegar
½ teaspoon salt
Method
Peel the horseradish root. Grate it coarsely by hand, then place it in the goblet of a liquidiser or food processor along with the vinegar and salt. Grate it very finely until a fairly smooth puree has been formed. Chill at least 2 hours before using.
Variations:-
1. Beetroot Horseradish: Boil one small beetroot until tender. Peel it and grate it finely. Stir it into 10 oz (280 g) prepared horseradish. This horseradish has a lovely rose colour.
2. Apple Horseradish: Peel, core and finely grate one large apple. Stir it into 10 oz (280 g) prepared horseradish. This horseradish has a somewhat sweeter and milder taste.
