Rose Petal Jam

Making this jam is almost as enjoyable as eating it: the simmering petals fill the air with their fragrance.
Ingredients
Makes two 6 oz (170 g) jars
8 oz (225 g) rose petals
12 oz (340 g) sugar
2 lemons
¾ pint (450 ml) water
Method
Early in the morning pick fresh, sweet-smelling pink or red roses. Trim the white base of the petals and discard it. Rinse the petals, then drain.
Slice the lemons very thinly. Place them in a pan with the water. Cover and bring to the boil. Simmer for 15 minutes, then remove the lemon slices and discard them.
Bring the lemon water to the boil again and stir in the sugar until dissolved. Then add the rose petals and cook until the leaves are transparent and the liquid syrupy, about 10 minutes. Pour into jars and seal.
